Beef Stroganoff

Ingredients:
- 1 lb (450g) beef sirloin or tenderloin, cut into thin strips
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1 cup beef broth
- 1 cup sour cream
- 2 tablespoons Dijon mustard
- 1 tablespoon Worcestershire sauce
- 1 teaspoon paprika
- Salt and pepper, to taste
- 2 tablespoons butter
- Fresh parsley, chopped (for garnish)
- Egg noodles or rice, for serving
Instructions:
- Prepare the beef: Season the beef strips with salt, pepper, and paprika. Heat the olive oil in a large skillet over medium-high heat. Add the beef and cook for 2-3 minutes until browned, but not fully cooked through. Remove the beef from the skillet and set aside.
- Sauté the vegetables: In the same skillet, add the butter and melt over medium heat. Add the chopped onion and garlic, and sauté for about 2 minutes until the onion becomes soft and fragrant. Add the mushrooms and cook for another 5 minutes, until they soften and release their juices.
- Make the sauce: Pour in the beef broth and bring the mixture to a simmer. Scrape any brown bits from the bottom of the skillet with a wooden spoon. Stir in the Dijon mustard, Worcestershire sauce, and sour cream. Let the sauce simmer for 5-7 minutes, allowing it to thicken slightly.
- Combine the beef: Return the browned beef to the skillet and cook for another 2-3 minutes, until the beef is heated through and the sauce is creamy. Taste and adjust the seasoning with salt and pepper as needed.
- Serve: Serve the beef stroganoff over cooked egg noodles or rice, and garnish with fresh chopped parsley.
