Beef Stroganoff

Ingredients:

  • 1 lb (450g) beef sirloin or tenderloin, cut into thin strips
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 cup beef broth
  • 1 cup sour cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 2 tablespoons butter
  • Fresh parsley, chopped (for garnish)
  • Egg noodles or rice, for serving

Instructions:

  1. Prepare the beef: Season the beef strips with salt, pepper, and paprika. Heat the olive oil in a large skillet over medium-high heat. Add the beef and cook for 2-3 minutes until browned, but not fully cooked through. Remove the beef from the skillet and set aside.
  2. Sauté the vegetables: In the same skillet, add the butter and melt over medium heat. Add the chopped onion and garlic, and sauté for about 2 minutes until the onion becomes soft and fragrant. Add the mushrooms and cook for another 5 minutes, until they soften and release their juices.
  3. Make the sauce: Pour in the beef broth and bring the mixture to a simmer. Scrape any brown bits from the bottom of the skillet with a wooden spoon. Stir in the Dijon mustard, Worcestershire sauce, and sour cream. Let the sauce simmer for 5-7 minutes, allowing it to thicken slightly.
  4. Combine the beef: Return the browned beef to the skillet and cook for another 2-3 minutes, until the beef is heated through and the sauce is creamy. Taste and adjust the seasoning with salt and pepper as needed.
  5. Serve: Serve the beef stroganoff over cooked egg noodles or rice, and garnish with fresh chopped parsley.
